What counts as leakproof?

Springform pans are, by definition, easy to release – so making them completely leakproof is nigh on impossible. For most cake mixtures, that won’t be a problem. A small amount of oil leaking from the bottom is all you’ll have to worry about.

But if you’re planning on placing your pan in a bain marie – that’s a water bath – you’ll need a good seal to avoid the water getting in.
