Individual molds or flat griddle?

Start by deciding whether you want a pan with individual pancake molds or a flat surface.

Individual molds will allow you to produce several uniform pancakes at once. And some even have embossed designs to add fun to pancake making. They’re particularly good if you’re trying to interest kids in cooking, or just want them to eat their breakfast!

The downside of pans with molds is that you’ll be limited to a single size of pancake. And while many can also be used for blinis or mini-crepes, you won’t have the versatility of a flat griddle.

Flipping also takes a fair bit of practice with smaller molds. Expect to make a bit of a mess the first couple of times you try!

The next thing to check is whether your pan is suitable to be used with your cooktop.

If you have an induction cooktop, many of the pans on this list won’t register on the surface. It is still possible to use them, but you’ll need to buy an induction ring separately. And even with a ring, the results aren’t always as good as for pans with their own magnetized base.
