It will have a similar flavor to grilled or baked dishes, but it cooks faster and offers better plating choices. So let’s explore some features to look out for when you’re shopping for the best grill pan (sometimes called griddles).

Deeps and Shallows

Grill pans have troughs, that’s how you get the pretty char marks on your cuts of meat and veggies. And because it’s a pan, you’ll put at least a little oil in it. But because you’re grilling the dish, you want your food cooked using dry heat rather than wet. Meaning you want your food to have minimal contact with the hot oil. This is controlled by the depth of your troughs.

Buy a pan that has high peaks (5mm) and deep shallows. This allows the oil (and any grease from your food) to settle in the troughs while the hot peaks accent your food. This way, your food will be far less greasy and have a more grill-like flavor. For the same reason, pick a pan with an adequate number of peaks so that your food is sufficiently and attractively char-lined.

Pans that are cast or molded (instead of begging hammered and forged) will have higher ridges and deeper troughs because these dimensions are carved into the original mold.
